Ever seen one? Jeep Fleet Van

A friend of mine came across this the other day and took a couple of pics. It’s apparently being used as a food truck. I’d never seen one before and thought it looked cool. Anyone have any knowledge or history on this?

Also known as a Jeep FJ. I saw one in a Jeep junkyard once about 25 years ago.

Friend of mine is handicapped and building one for a daily driver with a builder friend of his who built one for his wife’s daily. They are a decent number out there in various stages of disrepair
