My wife usually makes a big batch of dough into balls and freezes them, a few minutes in the air fryer/toaster oven and hot fresh baked whenever you get the urge.
I'm assuming since you don't know the brand of top you may not have the measurements to adjust the windshield angle as suggested by Kim.
These are the measurements from the Bestop instructions, (however they should be the same for all brands as the windshield angle effects full hard door...
Not to sound rude but this is a custom build (note the top, bed, rollbar, etc.)

I'm not sure if this pertains to your current setup but several years ago I had the 350 rebuilt in my new to me step van - (I wanted to start out with a known good engine for my business to avoid downtime).
The engine ran great for awhile and then had poor performance issues similar to yours...

Definitely a huge upgrade from the stock SB's.
I wonder how much difference the relays make for the stock SB's (no not asking you to test), maybe I'll try to remember to compare when I get around to doing mine. Definitely a worthwhile upgrade.
