Made sweet adn sour pork last night that was fantastic and less than 600 calories with rice. The family loved it and it is helping me drop the weight.

went downstairs to the cafe for lunch a few minutes ago... it is rain/snowing here and it is miserable... looking for some comfort food the special today:

Homemade Chicken/Bacon/Ranch Mac n' Cheese

Yup, it is as good as it sounds.

Now I need a nap.

Sunday night means tasty goodness! Morning began with red velvet pancakes with cream cheese frosting and coffee, only thing missing was Bacon!

Best meat loaf in the world tonight!!!! Inverted with extra glaze!

Tonight I am making homemade mac n cheese for the kids... Mommy and Daddy will be having chicken/corn quesidalla sliders... not too bad.

I love homemade Mac and cheese, we made bobby flay Mac once; I realized when we checked out we had $32 in cheese! It was ridiculously good!

This was a good weekend! Friday night the wifey had some sort of shower to go too so it was Landon and myself and I invited my Pa n Law over since Jess was with her mom. We had New York Strip, grilled onions, grilled zuccini and baked asparagus then our church does a "free" breakfast the first weekend of every month so we went and did that because Jess' dad is one of the cooks. All proceeds go to stocking the local food banks so it is a good thing. Saturday night our friends came over and I did some smoked chicken thighs and breast marinated in Red Wine Vinigar and Garlic Brine for a few hours. 2 hours on the smoker and it is smack yo mama good!! Sides with that were roasted red potatoes, grilled onions, grilled corn on the cob and spring mix salad with rasberry vinagrette. MMMMMMMMMMMMMMM!!!!!!! The good news is that I am down to 226 from 235!

Saturday night made rib tips and my Aunt Rosies baked beans. I grilled the ribs, then did the low and slow thing all day, then a quick brush of the sauce and under the broiler for a quick glaze...yummy!!!

Been a busy week/weekend so I didn't get to cook anything special. I do have a pork tenderloin waiting to hit the grill and I am planning on some teriyaki turger burgers one day this weekend with grilled pineapple.

I just whipped up some awesome burritos for breakfast! Two pounds of beef, mushrooms, spinach, green peppers, jalapenos, red beets, pinto beans, black beans, onion and taco powder mix.

Well it has been a crazy week. Landon had a double ear infection and the Roseola Virus so that has been fun but thank God he is better now in time for the weekend. Jess' granddad is not doing good with Stage 4 lung cancer so we have been visiting with him while we can and on top of that my wife bought dance lessons off of Living Social that we had to use this week as well so I am looking forward to crashing after work today. Last night was the first night that we have been home all week so I got to cook. Grilled Pork tenderloin, lima beans, cream corn from the garden last year and honey glazed carrots with a spinach salad to start things off. Seemed like a lot of food but was only a little over 600 calories all measured and weighed. I am sticking with it because I am down to 224 now. Here are the pictures and my sous chef.

That is a good looking meal! Making me hungry... I love steaks, seafood and all grilled food but nothing beats a meal like this.

I just use the can stuff and actually cook the CB and cabbage together in a electric skillet. It was a hamburger and hot dog kind of weekend here in the 70's all weekend!

Here its 27 degrees and snowing AGAIN winter has a grip on us this year and just wont give up. I took this this weekend at our cottage on the WI River.. the ice is finally off the river so pontooning cant be far behind...so there is hope! Last year it was in the 80's, we were running around in shorts and I bought the BMW and was driving with the top down....

I cook the CB low and slow all day with beer and brown sugar. In the summer I'll grill it a couple of times for something different.
