Did 5 racks on my weber grill. The char on the bottoms is specifically requested by my sons when I do them on the weber and not in the smoker. Suits me either way!

How did the ribs come out?

Well, they tasted excellent. Might pull them at a lower internal temp next time. Not well done, but not med rare like I usually eat beef. Very moist I might add

Wish i had taken some pics but I did an "over the top" method of birria in my weber kettle with a pork shoulder. Smoked it over the dutch oven with the consomè for 6 hours and then braised it for another 3ish. Best birria I've ever had. Wish I smoked it longer to get some better bark build up but I didn't have quite that much time.
 
No pics, but I FINALLY tried my Traeger 885 that I got for Christmas of '23... I know, I know... Anyway sacrificed a pork butt and it came out decent. Would grade it as a B to B+. Gonna try some pork ribs after my rib rack arrives from Amazon on Friday...

Decided that I am too damn old to tend a stick burner for 12 hours like I used to...
 
I like my leg of lamb a little more cooked, to about medium, with just a little pink still. Great on a rotisserie. It does look well seasoned.

Do you find a rack beneficial for ribs? Will you be hanging them or laying them on their side (like a napkin holder style rack)? I always have just laid mine down on the grate.

Will be next week till I do the ribs. Rack isn't due till Friday from Amazon. They will be kinda standing up.

I think the key to using the racks is that you can put several racks of ribs on at once. Ribs take up a lot of real estate on a grill or smoker.

True. Anything more than 2 racks on my smoker and I need to cut them in half. So maybe I will get a stand for mine
 
I did 5 but had to cut them in half to fit on my 3 burner weber spirit on the racks.
 
I'm sure this is probably blasphemy but we now smoke our ribs precut (party ribs) they get way more smoke and bark.
Also take up way more space but we can easily do two racks on the lower surface, more than enough for the two of us for a couple meals.
