I've been wanting to do my own bacon, got the pink curing salt #2 or whatever it is, just thought I'd ask you to expand on the complete recipe for us all?

Not at home right now but I'll see if I can put my finger on it when I get home.

Ok Gary... I'll try. I adapted the recipe from a charcuterie cook book.

Original recipe calls for:
10 lb / 4.54 kg pork belly, skin on. (I think mine was 36 lb before removing the bones so I had to adjust the rest)
5 oz / 142 g kosher salt
2 3/4 oz / 78 g maple sugar
4/5 oz / 22 g Insta Cure No. 1

Wash and dry the belly. Remove bones (if still remaining). Pierce skin with tip of paring knife or ice chipper.

Mix salt, sugar and Insta Cure well and rub all over belly (the pork belly not your belly :rotfl:) and put belly skin side down in a covered plastic or stainless steel tub (I used big ziplock bags).

Refrigerate belly for 7-10 days overhauling (kinda re rubbing cure mix and juices that have settled in the tub or bag) every other day. I added beer to one half of my bacon for the last 2 or 3 days.

After last day of curing, rinse belly in slightly warm water then soak in warm water for 30 minutes and blot dry. Refrigerate and hang the belly or put it on a rack for 18 hours to form a pellicle (tacky skin which helps seal in the smoke flavor) I think I put a small fan in the fridge with the bellies to help it form better.

I cold smoked (with maple wood) my bacon as low as I could (probably around 60-80 F/27 C degrees) for like 2 or 3 hours. Then hot smoked at 185 F/85 C degrees it until hit 155 F/68 C degrees internal temp. Then cool. Remove skin and use a sharp knife or meat slicer to slice.

I used an old school Oklahoma Joe smoker and real maple wood chunks and shavings so it wasn't so precise as some of the newer digital smokers that have thermostats and use pellets or disks. Also I remember it was cold and rainy that day so it ended up taking about an extra hour to reach the hot smoke temp or internal temp which made it really REALLY smokey still good but it drowned out most of the beer flavor. When I try this one again I'll just hot smoke without the cold smoke process.

I know....... I had to say to my self this won't rot away like jeep body parts do. Everything part is stainless on this. Screws ,grills, even the knobs.. 😎😎😎

Not as fancy as above.... But tasty all the same!

Extra thick butterfly chops marinated in white wine and herbs.....fresh beans, onions and garlic with olive oil.

I'm brining a pork tenderloin tonight. Then I'm going to rub it with fresh herbs and garlic tomorrow, wrap it in bacon and slow cook it on the grill... Pics to follow tomorrow!

Aaaaaaaaaaaaaaaand I just spilled my brine all over my counter, floor, feet, cookbook, ........... Maybe this comment should be in the beer thread.... Nah I was only 2 beers down... Anyways still had enough brine to cover the loin!

Ok here's what I did.
'Bout a 3 lb boneless pork tenderloin brined in the following... (Makes more than needed so I "tried" to scale down)
Master brine from a butchering book-
2 cups granulated sugar
2 1/1 cups kosher salt
1/4 cup whole peppercorns
6 Tablespoons whole coriander seeds
16 cups water
Boiled til sugar and salt dissolved then cooled.
Soaked loin overnight (would have done 24 hours if I planned ahead) then rinsed under cold water.

Combined/adapted 3 different recipes from 2 books for the following....

Minced fresh rosemary, sage, thyme, garlic, sea salt, fresh ground pepper rubbed on loin with a little olive oil.

Open a beer... Or 2 or 3 or 4

Cook low and slow indirect heat for about 45 minutes to 1 hour at 275-315 degrees F til the center of the loin hits 145 degrees...

Then moved to direct heat for a few minutes til 150-155 degrees.

Remove from heat and cover with foil rest for at least 10 minutes and it should rise to 160-165 F

Mostarda Sauce-
1 cup water and 1/2 cup dry mustard whisked in a bowl. Set aside.
Put 1/2 cup white vinegar
1 Tablespoon peeled minced fresh ginger root
1/4 cup brown sugar- in saucepan until sugar dissolved
then add mustard and diced dried fruit (I used about 1/3 cup each of dried apricots, apples, pears, prunes, peaches because it was in mixed bag could also use dried raisins, dates, mangoes, pineapple, figs etc as long as it's about 1/3 cup each of 4-5 types) then simmer for about 15 minutes.

Slice and serve with the mostarda sauce.

You aren't going to actually use it and get it dirty are you...its way to nice! You know how long its going to take to get the BBQ patina i the grills....
