What are you guys cooking!?

Burgers. Bacon standing by, salads and a dressing made with mayo, American mustard, garlic powder and chivesImageUploadedByTapatalk1439378556.109089.jpg
The bacon gave forth a bounty of lard and, you guessed it, that's what the burgers are sizzling in. Man it's aromatic to say the least. Best I scurry off and find a decent beer. Fridge says SNPA. OkImageUploadedByTapatalk1439378774.341029.jpgImageUploadedByTapatalk1439518460.363109.jpg

Here you go Kevin! Not sure if this is the exact combo I used but I know my pineapple reaper jam was based on this recipe... I think I may have like 90% seeded the Reapers but left the white flesh

Pineapple & Hot Chillis Jam

1 pineapple, skin and core removed
2 medium hot chillis, with their seeds
4 fat garlic cloves
1 thumb of fresh ginger root, peeled and roughly chopped
20ml Thai fish sauce
175g unrefined golden caster sugar
50ml white wine vinegar

Chop half the pineapple into small pieces and set aside. Put the rest of the pineapple with the chillies and their seeds, garlic, ginger and fish sauce in a blender and blitz to a fine puree.

Spoon the puree into a deep, heavy-bottomed pan and add the sugar and wine vinegar. Bring to the boil slowly, stirring as you go. When it comes to the boil, turn down to a simmer and add the diced pineapple. Skim off any foam that rises to the surface and cook gently for up to 1 hour, stirring from time to time, to prevent the mixture catching and burning. Scrape the sides of the pot too so that everything cooks evenly. The mixture thickens as it cooks.

When the mixture seems thick to the stir of a wooden spoon, decant it into a warm sterilised jar and seal.

Wow! Thanks! there is a lot more involved ingredients wise than I was guessing which is great. How do you store it, in the fridge? How long does it keep for?

I gave a lot of it away. I also didn't actually can it. I just put it in the jars. It'd probably be ok for a few months.

Too dry too salty unfortunately.
Last paint I made was a tiny bit of olive oil, raspberry jam and Worcestershire sauce. That would have killed the salt here

Basic burgers and dogs. Just the boy and I tonight. And yes. I made him stop eating to leave some for lunch tomorrow.

Fried egg FTW!!! Love them on burgers, though I prefer them about medium so there's yolk.

Damn, now I'm hungry...

6 lb pork loin,
Roll cut,
Rub with Olive oil, season with garlic salt, garlic powder, black pepper and some head country rub.,
Green is a mix of spinach, green onion, garlic cloves and white onion.,
Layer of fresh garden picked jalapenos. Rolled it all up. Tied it with twine.
Need to work on my the tie it up part.
Season outside with more Head Country rub and now ready for a few hours in the smoker!

Yes you can. And cheifwaho THAT is on my grill this weekend

I ate pizza every day for 2 years in college... roomate was a pizza delivery guy and brought home all the leftover junk at the end of the shift.
Sometimes you got peperoni, sometimes mushrooms and anchovies... and sometimes I just ate the crusts... lol.

I believe you exaggerate a bit. That's like saying you drank beer everyday in college too .. Every day ?????[emoji12]

Unfortunately, no... pizza for breakfast, pizza for dinner... BK down the street had 99 cent whoppers.
Needless to say, I don't eat BK anymore, but still do have pizza.

As for drinking everyday... I will leave that one alone.

I get into ruts like that. For almost two years at work I had a snapple and a steak and cheese sub with fries every lunch. Kind of boring.
