What are you guys cooking!?

Ditto. Standing rib roast for Christmas. I always use a large cast iron skillet in the oven, and roast some potatoes with the meat at the same time. Last year my nieces husband cooked it in a Traeger and it turned out well.

I mentioned smoking it and Carol was not as enthused. She won’t be eating it anyway, so, not sure why it bothers her. We will see on Monday.

This has been our go to for years as a Christmas meal.

Now that it's just the two of us we're planning on a reverse sear Rib Eye steak on the Pitt Boss. :christmas:

I’m out of date. What’s the R S ? Cook it in the water bath, then really hot, roast it very fast ?

If your asking about the Prime Rib Roast...

It's basically low and slow in the oven, then high heat (500) to create the crust.
The posted link explains it pretty well.

On the Rib Eye, it's basically the same.

We smoke on P5 (about 180) to 110,
remove steak,
increase smoker to 400,
sear the steak directly over the pellet fire pit (our grill has an available "sear" grate opening but we found the grill is hot enough above the pit at 400 to cook with it closed) to desired pre-rest doneness (ours is 125-130 for mid-rare),
let rest at least 10 minutes to finish cook temp
optional garlic butter coating

Thanks. Explained it well. And the recipe. Always have done it in the beginning. Going to give it a try.

Pocked up a rib roast for Christmas. Discussing methods for cooking it with Carol.
I picked up 2 large ones for tomorrow, cooking for 21 people. It was on sale for less than hamburger. That helped. Cook the bone in standing rib roast at 500 for 15 minutes, then cut back to 350 until it gets to 127 internal temp for medium rare.

This is all making me very hungry. Can’t wait for the dinner now.

Very nice, traditional setting @John N . Tells me you're a guy with longstanding family tradition! All the best for The Christmas!
Yes, we do. 21 for Christmas dinner this evening. We do the 23rd so all of our children and nieces can be at their in-laws Christmas Eve or be at their homes with their children. BTW, we always do Thanksgiving too, this year we had a seated dinner for 37…. Did I mention that I’m done with dishes?

Used your recipe, but seared at the end.

We ended up doing 2 medium sized standing rib roasts. My nieces husband seasoned them and cooked on a Traeger. Came out pretty good, I would have seasoned them less, but he was in charge. 3B008D43-FC5E-4877-9359-FE7AC4E974FF.jpegA41FC87B-9FD3-40C9-B888-7C9A0F2559E1.jpeg

Along with the rib roast, we had mashed potatoes and a broccoli cheese casserole. Very filling dinner. And a little Pappys neat.
