Rest of the line up for the night are North Carolina beers. (Wife and I are visiting friends in Charlotte)
Foothills Brewing Company: Seeing Double IPA
Bird Song: Mexi Cali Stout
Both at a cool bar called The Saucer in Charlotte.
Got this bottle out to share with Kate and she claimed the whole thing because she likes it so much! Their Baltic Porter aged in red wine barrels. Very very nice.
Next up. Four Witches Black Saison from New Holland.
Never had a black saison but this is exactly what I'd imagine one would taste like. Some saison spice that's tempered with a malty black lager taste. Really like it.
Tried a couple different home brews last night I did with a friend over the last few weeks. Had a Pliney the Elder clone and a strong Belgium ale, both came in around 9% and were very tasty.
It is a lot of fun and the science behind it is really cool. With the software you can hardly go wrong as long as you follow all the steps and sanitize the way it should be done. We use the software to adjust not only the PH of the mash and HLT water, but the chemistry of the water using the water reports of the city the beer comes from using the software. I have done 4 batches so far and brew day has become almost effortless knowing the process and working as a team.
