Welcome, I was in NC until last year about this time when we moved to MI. We were in Durham.
Of course, we'll have to have pictures of your Scrambler to answer your question
There's a number of threads on here about insuring Scramblers if you search around.
Regardless of what you do to insure it
KEEP YOUR RECEIPTS!!!! Either to establish the stated value or to prove the value if something were to happen. I was hit in mine (100% other person's fault) and I had to fight to get what it was worth rather than having them total it. In the end, I was happy with what I got and thought it was a fair deal, but having the receipts for things was key.
Also, along the lines of what John mentioned (and you'll see it in the threads on here) there's options for stated value policies and insuring these as historic vehicles in many states, BUT read the fine print!!! Many of these have the off-road use exclusion like John mentioned or they put severe restrictions on where/how far you can drive it (ie. to and from shows, to and from shops, less than xxx miles per year, etc.)
Given that the ins company will look HARD for ANY way to get out of covering you if something happens, you don't want to give them the chance because you tried to save a buck on one of those restrictive policies.
Anyway, that's my caution when it comes to insurance. I just insure mine as a regular driver (with lower per-year mileage and a higher deductible) and keep all my receipts.
