Not cooking, but rather curing...
It's turned into a yearly tradition over the last 4-5 years to celebrate our Nordic heritage(more so the wife's side) to make Gravlax for Thanksgiving and Christmas. I may have gone overboard this year, bought a fresh caught Alaskan King Salmon and had it overnighted to MN, frozen for 48 hrs to kill potential pathogens and parasites. A little salt, a little sugar, some dill, and half a bottle of Aquavit and they'll be perfect for snacking on while waiting for the smoked buzzard on Thursday.259406538_10159788030766948_4411699051568444136_n.jpg
 
Smoked some spare ribs on Friday. Been eating them since. I still have about 1 rack left.

Picked up a new to me Horizon 20" Classic Smoker to have something for those smaller cooks.
Always felt a little silly firing up the big smoker (Oklahoma Joe's) for one slab of ribs, LOL.
Finally got around to firing up the Horizon this past weekend.

First time doing boneless beef short ribs (similar IMO to a brisket cut).

Turned out pretty good, decent smoke ring.

It was then doused with wings sauce.

I like my bacon a little crispy. Does the bacon on that get crispy ?

Not really crispy no since its smothered in BBQ sauce. I imagine you could pull it from the smoker early and give it a quick singe in the broiler though I never tried.
 
I made some more ribs on the smoker yesterday. I was going to smoke a brisket today, but with the crap weather, I will do it tomorrow.
