No pics but used the Blackstone to make some sauteed cabbage and gulf shrimp. Dang good... :)

It was pretty damn good. There was a miscommunication with this years steer. I usually have the round steaks ground into burger, that didn't happen this year, so I have a crap ton of tough steak cuts I usually don't. So it's time to get creative and find some old school recipes for the tougher less desirable cuts.

I want to try a corned beef I purchased a whole brisket the other day for smoking, once I trim it out may keep a section for the corned beef.
The flat makes better corned beef than the tip does, if ya do it. I've done it a few times, each one gets a bit better.
 
Made some chili for a cook-off at my local club meeting. Used my usual Carroll Shelby mix to start. Beef and pork. No beans. Added ghost, reaper, chili, and habanero peppers. It was super hot when I started cooking it. But after cooking a number of hours it mellowed. But it was still hot enough to win. And had enough flavor to still be edible.

Would you prefer it to be too hot to eat? Just wondering. Because usually a few people tell me I make it too hot to eat, but I disagree. One person at this event who had a shaved head was sweating from his scalp after eating it. But it really wasn’t that hot to me.
