Well I didn’t read into the heat part much. What ever I eat, it is all about flavor. Whether hot or not, if there is not much flavor, what is the point. Down here the saying is “ we live to eat “, where most places people “ eat to live.” The food here is all about flavor, period.
 
I've had 2 quarts of various superhots and garlic fermenting since September, got brave today and decided to process them and see how the flavor turned out. Well lets say it needs to be tamed down just a bit. Great flavor for a base to make a hot sauce, decided to go with pineapple for a sweet heat! And $12/lb believe it or not tenderloin x 2, two ribeyes, Chicken breast and two "pub burgers" for my father in law that can't chew steak (Lord, that's got to be awful!).

Just had an awesome dinner with nuclear pineapple as the special guest star hot sauce. This is the plate with the last lamb chop, beans and cherry tomatoes and saffron rice pilafIMG_20220607_175736021.jpg that I put together for my oldest son who is on his way home from work. My other two sons really wanted to finish this plate too but I fought them off. Awesome job on both sauces!
 
I smoked some wings last weekend. I used a Nashville Hot rub. It turned out super hot. I enjoyed them despite the sweating and run y nose. I will try to tame it next time so that my wife will actually eat and enjoy them.

Did a full brisket and a couple flats for friends. Good day on the smoker... Started at 0130 and had them cut and packed by 1600.

You just took me back to childhood! "Going Places" or "Things To Do?" Renee and I have a phenomenal cucumber relish for salmon too.
