Oh yea, count me in on following this one.
Sorry no pictures, but last night we had Scallops, Jumbo Shrimp, Asparagus, Zucchini, and Pineapple on the grill.
Used a mix of 1/4 cup of Orange Juice, 1/3 cup Soy sauce, a tablespoon of brown sugar, and a thumb sized piece of ginger for the marinade. Grate the ginger and combine with other liquids, add a couple dashes of red-pepper flake to give it a little heat. After de-veining the shrimp and cleaning the Scallops let the marinade sit for 15-20 minutes while you cut the pineapple into 1/2 to 3/4 inch rings. Cut zucchini length wise, and lightly oil and sea salt it and the asparagus.
Grill the pineapple rings and zucchini first for about 10 minutes, then place you scallops and shrimp on, give everything about 6 minutes then flip, careful with the scallops, I give about 5 minutes on the back and remove everything but the pineapple and the zucchini which stays for another 4-6 minutes. Meat needs to rest for a few moments anyway. If you like, hit the pineapple with a good flame for a moment on both sides to made the sugars really caramelize in it.
Plate and serve, had a small salad with fresh berries as well, drink was a Virginia Viognier.
