Went out the other afternoon and it was slow and had to work for the ones we did get but still hit out limit. Here's my 26 3/4" upper slot HOG! They all ended up here on the half shell - delicious. The great state of NC has "allowed" us a 14 day flounder season starting Sept 1, I'll be posting up those tender vittles too.

Smoked a brisket this weekend. First time ever putting better on it and wrapping it. Dang that was gpod. The brisket is almost gone. My son has been eating a ton of it. I guess he liked it.

Smoking these two pork shoulders took the longest Time ever. Put them on the smoker at 8am. Had to refuel after 6 hours. Total time was 15 hours. Took them off at 11:00. Let them reat and just got them pulled. They would not go above 155° for many hours. Ended up wrapping them at the 11 hour mark to speed it up. This should feed me for a few days.

Well in place of the gator we wanted to do, yesterday I did 3 boston buts and a chuck roast, today for the fooseball games I'm whipping up an old fashioned Low Country Boil... Gotta get all the favorites in before I go under the knife next week, actually more just cause I'm a fatty and love food.

I have been making pizza for a long time. I make the dough and the sauce from scratch. I do all kinds of pizza-adjacent things, but I think I have the final calzone settings, if you will.

No pics, but did an Orange Chicken w/ veg and udon noodle stirfry on the Blackstone tonight. Also made some cream cheese stuffed/ bacon wrapped jalapenos for appetizers. Retirement allows for so much more time for the fun cooking! :)
 
Did some beef ribs awhile back. Came out ok. A little pull to get it off the bone. Just not very meaty. Tasty though.

I love really well executed beef ribs; and keep trying to get it right but haven’t got it nailed. Not sure if I’m not quite getting to 197? Wish I could get it right

Smoked some ribs today while working from home. Dry rub only. I planned on applying some sauce this time for the last 20 minutes of the cook. But was stuck in a meeting so, oh well. They may even be a little more cooked than I planned. These are super flexible and may just fal off the bones. We will see. I do see a bone already falling out. Oops.
